Wow! I just have to share sometimes when I get recipes that result in such stable blood sugars for my Type 1 son. I bet there are many non diabetics who don’t get these great results. Cooking healthy meals for my family is one of my favorite things to do. My children know how to make a plate for a meal with a protein, a fast carb, and a slow carb. This is one of those all in one bowl meals, but it is delicious and soups are perfect for this time of year.
One cooked, smoked whole chicken *season as you wish, we like garlic powder, turmeric, and season salt
One package organic celery

Amish Brand homemade egg noodles
We smoked a whole chicken and had it for a meal the night before. I peeled the remaining chicken off the bone, then added that meat and the chicken bones to a pot of water and boiled it for two hours. Then, I strained the bones out of the chicken stock for the soup. To the boiling water and chicken meat I added cut up carrots, celery, and a tablespoon of minced garlic. After the vegetables were cooked, I added the egg noodles and on medium high, continued cooking the soup until the noodles were tender. I didn’t need to add any extra seasoning because we had already seasoned the chicken when we smoked it.
This soup was delicious and we only had to dose for the carb amounts in the egg noodles. (Whichever brand you use, or homemade). Enjoy! Soup recipes are my favorite to have on the stove daily this time of year. Be well!
